Easy Strawberry Cake

Ingredients
  

Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 1 cup fresh or frozen strawberries chopped

Frosting:

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • ½ cup strawberry puree
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C). Prepare pans.
  • Whisk flour, baking powder, salt.
  • Beat butter and sugar till fluffy.
  • Add eggs one at a time, then vanilla.
  • Alternate adding flour and milk.
  • Fold in strawberries.
  • Bake 25–30 min. Cool completely.
  • Beat frosting ingredients till smooth.
  • Assemble cake with frosting between layers and on top.

Notes

  • Best served fresh but keeps well refrigerated.
  • Can add a splash of lemon juice to frosting for extra tang.
  • Garnish with fresh berries or mint for a festive look.
