- 4 bone-in skin-on chicken thighs or breasts
- 3 tbsp olive oil
- 4 cloves garlic minced
- 1 tbsp fresh rosemary chopped
- 1 tbsp fresh thyme chopped
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- Juice of half a lemon
Mix olive oil, garlic, herbs, salt, pepper, lemon juice.
Coat chicken with marinade; refrigerate 30+ min.
Roast at 400°F (200°C) for 35–40 min or pan-fry skin-side down 6–8 min each side.
Rest 5 min, garnish, serve.
