- 4 bone-in skin-on chicken thighs
- 2 tbsp olive oil
- 1 medium onion sliced
- 3 cloves garlic minced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 cup mushrooms sliced
- 1 can 14 oz crushed tomatoes
- ½ cup dry white wine optional
- 1 tsp dried oregano
- 1 tsp dried rosemary
- ½ tsp red pepper flakes optional
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Brown chicken in olive oil until golden, 5–7 min each side; set aside.
Sauté onions, garlic, bell peppers until soft; add mushrooms, cook 3 more minutes.
Add tomatoes, wine, herbs, spices; stir well.
Return chicken, simmer covered on low 30–35 min until cooked.
Garnish with parsley; serve hot.
