4 bone-in, skin-on chicken thighs or breasts
3 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
Juice of half a lemon
Instructions
Prepare the marinade:
In a bowl mix together olive oil, crushed garlic, rosemary, thyme, oregano, salt pepper and lemon juice.
Marinate the chicken:
Massage the marinade onto the chicken all over. Cover and chill for at least 30 minutes, preferably 1 hour.
Cook the chicken:
Oven version: Preheat the oven to 400°F (200°C). Now put the chicken on the baking tray, skin side up. Roast for 35-40 minutes or until chicken is cooked through and skin is crispy.
Stovetop: Preheat a skillet over medium heat. Add a tablespoon of olive oil and cook the chicken skin-side down for 6-8 minutes until the skin is golden brown. Turn the fillets over and cook an additional 6-8 minutes until they are cooked through.
Rest and serve:
Allow the chicken to rest for 5 minutes and serve. Top with some fresh herbs if you like.
